I was born in Marseille, France. As a kid to make a few francs in the summer I worked in hotels as an apprentice. The managers, Maitre Ds’, waiters, receptionists who worked in these hotels were professional and very strict. I did not like it at the time, but it served me well in my future in the hospitality industry. I came to Vancouver in 1982 where I worked at the Cafe de Paris on Denman street where Michel Jacob worked as a chef. A year later Michel approached me and told me he was opening his own restaurant and asked whether I would like to work for him. I said yes. The restaurant was called Le Crocodile after one of Michel’s favorite restaurants in his native Alsace. Forty one successful years later, we are still together and have spent more time together than we have with our loved ones. I am very thankful to Michel and the many, many loyal customers who have animated my days and nights and made these years of hard work very rewarding. And voila how you spend a lifetime in the hospitality industry.
